Fallow deer originally come from Europe (Scotland, Ireland, and the Mediterranean), and they’ve adapted beautifully to the Texas Hill Country. They’re one of the most visually striking species on the ranch. Fallow come in one of three color phases: White, Spotted and Chocolate. Bucks have arguably the most impressive antlers in the entire deer family with scores of points rimming wide, tall, palmated beams. On top of that, they’re also excellent to eat!
